Blueberry almond baked oatmeal cups

INGREDIENTS

4 cups old fashioned oats, gluten free certified if necessary

1½ teaspoon ground cinnamon

1 teaspoon baking powder

½ teaspoon salt

2⅓ cup unsweetened almond milk

¼ cup coconut sugar or brown sugar

2 teaspoons vanilla extract

⅓ cup pure maple syrup

1 cup blueberries, fresh or frozen

1/2 cup sliced almonds

Steps: first, Pre-heat oven to 375 degrees F. put all ingredients to a large bowl and mix well until everything is combined.

Spray a muffin tin with a cooking spray and scoop oatmeal fusion in using a large ice-cream scoop or a 1/4 measuring cup. The mixture will be a little wet, so it’s important to mix well before each scoop to make sure you get an even combination of skim milk and oats. Finally, bake oatmeal cups for 20 minutes, or until cooked through.

Lemon poppyseed

INGREDIENTS

4 cups old fashioned oats, gluten free certified if necessary

1½ teaspoon ground cinnamon

1 teaspoon baking powder

½ teaspoon salt

2⅓ cup unsweetened almond milk

¼ cup coconut sugar or brown sugar

2 teaspoons vanilla extract

⅓ cup pure maple syrup

2 teaspoons lemon zest

2 teaspoons lemon juice

2 teaspoons poppyseeds

Steps: First, Pre-heat oven to 375 degrees F. Put all ingredients to a large bowl and combine well until everything is combined.

Second, spray a muffin tin with cooking spray and scoop oatmeal mixture in using a large ice-cream scoop or a 1/4 measuring cup. The combination will be a little watery, so it’s important to mix well before each scoop to make sure you get an even combination of milk and oats.

Finally, Bake oatmeal cups for 20 minutes, or until cooked through.

Sweet potato carrot healthy baked oatmeal

INGREDIENTS

4 cups old fashioned oats, gluten free certified if necessary

1½ teaspoon ground cinnamon

1 teaspoon baking powder

½ teaspoon salt

2⅓ cup unsweetened almond milk

¼ cup coconut sugar or brown sugar

2 teaspoons vanilla extract

⅓ cup pure maple syrup

1 cup sweet potato puree

1/2 cup grated carrots

1/4 teaspoon grated nutmeg

1/4 teaspoon ground cloves

Steps: First, you have to pre-heat oven to 375 degrees F. Add all items to a large bowl and mix fine until everything is combined.

Second, spray a muffin tin with cooking spray and scoop oatmeal mixture in using a large ice cream scoop or a 1/4 measuring cup.

Finally, Bake oatmeal cups during 20 minutes, or until cooked through.

Peanut butter banana

INGREDIENTS

4 cups old fashioned oats, gluten free certified if necessary

1½ teaspoon ground cinnamon

1 teaspoon baking powder

½ teaspoon salt

2⅓ cup unsweetened almond milk

¼ cup coconut sugar or brown sugar

2 teaspoons vanilla extract

⅓ cup pure maple syrup

2 large bananas, mashed

1/2 cup peanut butter, smooth or crunchy

1 Frozen Fruit Yogurt Bark Recipe

Ingredients:

1 large container of plain yogurt

1 tablespoon vanilla

2 cups chopped fruit

Instructions: First, Line a large baking sheet with parchment paper. Second, Combine the plain yogurt with vanilla. Then, Pour the yogurt onto the baking sheet and spread a little to even. Finally, Sprinkle on the chopped fruit and freeze for 3-4 hours until frozen solid. Slice up and enjoy!

2 Copycat Trader Joe’s Gone Bananas

Ingredients:

1 banana

1 heaping cup dark chocolate chips

2 Tbsp coconut oil

Instructions

Slice the banana and place the slices on a tray. Put the bananas in the freezer. Meanwhile, place the chocolate and the coconut oil in a small microwave safe bowl. Microwave for 30 seconds and then stir. Microwave for another 15 seconds and stir again, until all the chocolate is melted and smooth. Put it back in the microwave for few seconds (if necessary). Don’t over heat. Set the chocolate aside to cool.

When the bananas are solid, dip them into the chocolate and coat on all sides. Put the slices in the freezer.

 

3 Nutella and Banana Sushi

Ingredients:

2 Bananas

Peanut butter

Cereal (I used toasted rice cereal)

Some wax paper.  Foil or parchment paper would work just as well.  You just need it so you don’t have to wipe peanut butter smears off your counter.

You could sub nutella or sunflower butter for the peanut butter.  You could try out different types of cereal.

4 Fresh Fruit Pops Recipe

Ingredients:

2-3 Kiwis, peeled and sliced

1 pkg Fresh Strawberries, sliced

2-3 Tangerine Oranges, peeled and sliced

1 pkg Fresh Blueberries

Coconut Water

Popsicle Mold

Instructions: Add, cut up fruits to Popsicle mold. Pour in coconut water to fill the mold and finally freeze filled mold overnight until solid.

5 Silly Apple Bites

Ingredients:

2 green apples, each quartered

Sunflower butter

32 sunflower seeds

2-3 strawberries, sliced

1-2 homemade googly eyes per apple bite

Instructions: Cut the middles out of each part of the apple to create a mouth. Fill this gap with sunbutter anyway so if you cut too deep, you can cover it. Then, Coat the inside of the cut gap with a filling of sunflower butter. Place 4 sunflower seeds on the top of the “mouth” for the teeth. Place 1 sliced strawberry inside the mouth for the tongue. “Glue” each eye above the mouth with a dab of sunbutter to stick. Serve with a smile!
